Father's Day 2020 Edition - Opera
The most prominent and classic combination of chocolate and coffee
Opera is a French cake invented by Chef Cyriaque Gavillon in 1955. He wanted to create a cake that has all the flavours in one bite. 'Opera' is named after his wife told him the cake reminded her of the Paris Opera House, Palais Garnier.
Following the old recipe, our opera cake consists of 9 layers, four layers of coffee syrup-soaked joconde sponge, layered alternatively with two layers of Valrhona dark chocolate ganache and two layers of coffee buttercream. Lastly, it is finished with Valrhona dark chocolate mirror glaze and edible gold leaf to have the elegant look.
In conjunction with Father's Day, we have created the wood texture chocolate decoration with the word 'opera' is sprayed on it. And of course, a little moustache as the last touch up! Don't worry about the wording spray, it's edible white cocoa butter.
