Inspired by Deepavali's golden glow and the auspicious symbolism of coconut — this cake is bright, tropical and layered with contrast, and brings a fresh expression of pineapple and coconut to the table. The vibrant fruitiness keeps the creamy coconut from feeling heavy, while the almond sponge gives the cake a warm, lightly nutty foundation. Juicy, tangy and rich in all the right places, each layer adds something different while keeping the overall flavour clean and refreshing.

A generous layer of pineapple and passionfruit compote gives the cake its first burst of brightness, with juicy pieces of MD2 pineapple adding little pockets of fresh fruitiness throughout. The tangy fruit gradually gives way to the creamy richness of coconut mousse, followed by a lighter coconut chantilly that keeps the texture airy and delicate. Paired with soft almond genoise and a smooth pineapple and passionfruit coulis, each bite moves from vibrant and juicy to creamy and mellow, finishing with a lingering tropical freshness.

Ingredients: Butter, Cake Flour, Coconut Puree, Eggs, Gelatine (Fish), Ground Almond, Invert Sugar, Lime, Mango Puree, Mascarpone , Passionfruit Puree, Pectin NH, Pineapple Puree, Sugar, Trehalose, Whipping Cream.

Keep refrigerated (0-4°C) immediately upon receiving for at least 30 mins. Avoid freezing.

Take the cake out from the fridge before serving. Best serving temp: (10°C - 12°C).

Use a stainless steel knife for clean slices. Fork into every layer to savour the full experience.

Due to their temperature sensitivity, we recommend transporting our cakes only by car. Ensure the cake is placed on a level surface at all times and keep the AC on high and avoid sun exposure.

For journeys longer than 1 hour, use a cooler bag and ice packs to preserve freshness.
