Kochi Yuzu Mango Tart
Our Kochi Yuzu Mango Tart is made by handmade almond tart base, filled with French almond cream and pure Kochi Yuzu curd. A fluffy joconde sponge and a layer of Kochi Yuzu Mango Curd are added on top. Last but not least, the tart is surrounded with mascarpone chantilly cream and some lime zest as a final touch.
Kochi is the biggest yuzu production in Japan. The Kochi Yuzu has a very refreshing aroma and strong acidity so it's very sour when you eat it alone. The yuzu has a similar sourness with lemon but its strong aroma is irreplaceable. Therefore we created this Kochi Yuzu Mango Tart to balance out the acidity with the sweetness from the mango and French almond cream. It's the perfect combination of sweet and sour and leaving you a very light and refreshing aftertaste.
